
Rains are back again here in Bangalore! Cravings for namkeen is all time high. Guilt of bad calories act as restraints. So, decided to make namkeens in the air fryer. Was worried about the outcome. But came out chatpata and crispy. Absolutely, no guilt snack in Sabudaana Mixture. The snack is famously sold as Nylon Puri in Bangalore bakeries.
Sabudaana Mixture Ingredients:
Nylon Sabudaana (big variety): 200 gms
Peanuts: 50 gms
Fistful of sliced dry coconut
Cooking oil: 4 tsp
Salt as per taste
Pepper freshly crushed: 1tsp
Curry leaves: about 20
Red Chilies: 2 long ones
Mustard: 1/2 tsp
Hing about: 1/2 tsp
Turmeric: 1/2 tsp


Method Of Preparation:
Mix the peanut, sabudhana, dry coconut with about 3/4 tsp oil and fry in an air fryer separately.
They require different time each to fry crisp, approximately 5-6 min for sabudaana, 3-4 minute for peanuts, 1 min for dry coconut.
Make a mixture by mixing all the above three after frying. They can be deep fried individually in cooking oil too in the absence of an air fryer.
Mix crushed salt pepper. Heat about 1 and 1/2 tsp oil in kadai, add mustard, curry leaves, red chilies, hing and turmeric. Pour on the above mixture, toss well, cool and store in air tight jar. Stays well for 10-12 days. This takes hardly 20 minutes of cooking time. No prior preparation or planning. Hence, convenient for working women like me.
