Medu Vada and Dahi Vada!

Medu Vada

Medu Vada:

Ingredients:

Urad dhal: 2 cups presoaked for 2 hours and drained
Green chillies: 3
Curry leaves torn: 2 twigs
Pepper: 1/2 tsp crushed
Hing: 1/2 tsp
Salt as per taste
Finely chopped coconut: 2 tsp
Rice powder: 2 tsp
Water: 2 tbsp

Method Of Preparation:
Grind the presoaked Urad dhal with as little water to run the mixer. Grind till  the dhal is ground into a fine textured, light and fluffy batter.
Transfer the batter in a bowl.  Add rest of spices and masala ingredients mentioned above.

Rice powder is added to give the crispiness to vada and also to thicken the batter to shapeable consistency (too much rice powder hardens the vada, so don’t exceed 2 tsp).
Mix all and beat the batter in a deep bowl for 5 min consistently, for aerating the batter (lighter the batter softer the vada).
Now wet the right hand, place a lemon size batter on forefingers as shown. Dip the thumb in water and create a hole in the center. Slowly slide into hot oil. Oil should be on medium flame, good enough to cook the vada inside, as well as produce a golden hue on the surface.
A stem of a teaspoon can be used to drill a hole if the shape gets distorted while sliding the vada into oil. But it’s to be done immediately after it’s into the oil.
Fry till golden brown, drain and remove.

Serve hot with chutney of your choice.

Dahi Vada

Method Of Preparation:
Had a few Medu Vada left over for evening. So, made some Dahi Vada with it.
Whisk 2 cups thick curd with salt (1/2 tsp) and sugar 2 tbsp.
Dip the vada in warm water. Squeeze out the water between two palms.

Arrange in a bowl. Top it with whisked sweet, salty curd. Add a teaspoon of Chat chutney (mentioned in Recipe here). Sprinkle red chilli powder (1/2 tsp), chat masala (1/3 tsp), coriander leaves chopped (1 tsp), crisp sev (1&1/2 tsp), pomegranate seeds (optional) for garnish. Serve the yummy dahi vada!! Enjoy!
