Maddur is a small Hamlet with a population of about 25000 people on Bangalore – Mysore highway.
It would have remained nondescript on the map, if not for the crispy golden brown Vadas which compelled the travelers to take a stopover. The hither-to secret recipe has become household after Advent of the Internet!
Maddur Vada – Ingredients:
Rice powder: 2 cups
Chiroti rava( fine variety): 1 cup
Maida/enriched flour (warmed on a stove): 3 tbsp
Hot oil: 2 tbsp
Salt: 1 tsp
Hing: 1/2 tsp
Chilli powder: 1/2 tsp
Finely chopped green chillies: 2
Finely chopped onions: 2
Handful chopped coriander leaves
Grated Ginger: 1 inch
Method Of Preparation:
Mix chopped onions, chillies etc with a little salt and keep aside till they exude a little water.
Add hot oil to flours and rub to make a crumb texture (make sure you don’t burn your hands!). Just before frying Vadas, mix the dry and chopped spices with flour and knead with the juice that salted onion exudes. Use extra water as little as possible. Make stiff dough. Make roundels. Flatten and deep fry. Serve crispy spicy golden brown hot Vadas with hot tea. Chutney is optional.
