Jackfruit Cookies

I had some last year’s units of jackfruit in my freezer. Wanted to finish it before this year’s season begins. After Jackfruit idli, payas, jackfruit ice cream, I thought why not jackfruit cookies  🙂

 

Ingredients

All purpose flour: 1 and 1/2 cups

Milk powder: ½ cup

Ghee: 2/3 cup

Milk: 3 tbsp

Sugar: 1/2 cup

Jackfruit pulp: 2/3 cup

Baking powder: 1 tsp

Cardamom powder: 2/3 tsp

 

Method Of Preparation:

Mix the flour, milk powder  and baking soda.

Whisk Jackfruit pulp, sugar, ghee, milk and cardamom powder.

Add the flour.

Mix and knead into a cookie dough. Make small roundels, flatten with palm or reshape with a cookie cutter.

Bake in a preheated oven 15-18min till golden brown.

The cookies appear soft to begin with and harden after cooling. Enjoy!
