Capsicum Rice//Mixed Rice Variety//Vegetables//Colorful //
Capsicum/Bell pepper is my favorite vegetable now. As a child, I never liked to eat this vegetable and my Champ has taken over me where as my Rockstar absolutely loves Bell peppers. It is always good to embrace the change and move on. Presenting today is one of my favorite rice dishes. The crunchiness of the bell pepper, sweetness of the peanuts brings in a lot of flavor and good texture to the dish.
Cooked rice: 2 cups
Mustard seeds: 1 tsp
Bell peppers: 2 n
Oil: 2 tsp
Curry leaves a few springs
Salt as required
For the Masala Powder :
Cumin seeds: 1/2 tsp
Coriander seeds: 1 tsp
Cinnamon: 1/2 inch piece
Dry red chillies: 3 ( according to spice level )
Roasted peanuts: 1/4 cup
Dried coconut: 2 tsp
Urad dhal: 1 tsp
Chana dhal: 1 tsp
Method Of Preparation:
Heat a pan on medium heat and dry roast all the ingredients of masala powder till the raw smell goes away and keep it aside.
Once cooled, grind into fine powder.
In a kadai, add oil.
While hot, add the mustard seeds and let it splutter, add curry leaves.
Sauté bell peppers, don’t overcook them. Let the crunchiness of the bell peppers stay.
Add salt, the ground masala powder and mix well.
Add cooked rice and gently mix well. Keep it on low flame for few minutes mixing it occasionally to avoid burning.
Serve hot with papad or raita.
While making any mixed variety rice dishes, add a tea spoon of ghee to the rice while cooking and lessen the water quantity by 1/4 cup.
This helps the grains to be separate and gives a good texture to the dish.
