Masala rice // Green peas // Quick Lunch Box recipe.
My mom is a wonderful cook. Before getting married, I never bothered to learn anything from her (guess that’s something all of us do, right ?:) We don’t realize the value when we have it. After moving to the US is when I realized what I missed. Then started all the phone conversations on cooking, recipes and slowly I started learning her recipes. This masala rice is the first recipe I learnt from her. I remember my mom had made this when my in-laws had come to meet me for the first time and I still make it when they visit me or I visit them, my father in laws favorite rice variety. This is the recipe I go for when I don’t want to chop many vegetables yet need to make sure we get enough.
Cooked rice 2 cups
Chopped onion 1/2 cup
Chopped tomato 3/4 cup
Shelled green peas 1/2 cup ( I prefer more vegetables so I added extra peas)
Salt as required
Turmeric few pinches
Garam masala: 1 table spoon.
Oil: 1 spoon
Mustard, jeera, urad dhal, chana dhal 1 tsp each.
Garlic pods: 4
Curry leaves: few springs
Green chilies: 2 slit length wise.
Method Of Preparation:
Take a kadai/pan, add oil and add the ingredients in the tadka in order starting with mustard.
Fry the garlic well, add onions.
When the onions are translucent, add tomatoes.
Once tomatoes are soft add green peas and cook. Add salt, turmeric and garam masala.
Fry for few minutes and add cooked rice and mix well.
Close the pan with lid and leave it under low flame for few minutes for all the flavors to marry!
Garnish with coriander and serve hot with boondi raita or any raita of your choice or even chips.
