Easy//Variety rice//Lunch Box recipe
I am blessed with friends are who are very kind and who take good care of me. A couple days ago it was one those days where I didn’t feel like cooking anything, managed with the dosa batter that I usually keep in the fridge for my boys. At the right moment my neighbor comes home with this great looking rice dish that was appealing to my eyes!! What else do I need when I didn’t want to cook and when I was super hungry !! It was cucumber rice which I had never heard of! I took the first bite and fell in love with this variety rice. Sharing is caring right..today am here writing the recipe for all of you to cook and enjoy.
Grated cucumber: 1
Grated coconut: few table spoons
Chopped coriander leaves
Cooked rice 1.5 cups
Oil: 3 spoons
Mustard, jeera, urad dhal, channa dhal: 1 tsp each
Slit green chillies: 4 no
Curry leaves few
Salt as required
Lemon juice: 1 tsp
Method Of Preparation:
Heat oil in a kadai.
Once hot, add mustard and jeera. When they splutter add urad dhal, channa dhal, greenchiliis, curry leaves and sauté.
Add peanuts and cashewnuts and fry for a minute.
Lightly squeeze out water from the grated cucumber and add to the kadai.
Fry well till the raw smell is gone.
Add grated coconut, salt and coriander leaves to the cooled rice.
Add the well fried cucumber mixture to the rice and mix well along with salt and lemon juice.
Yummy cucumber rice is ready. Serve with boondi.
