Vege Fried Rice using Brown Rice

Fried rice using brown rice is not only a healthier option as compared to white rice,  but turns out to be very delicious with the nutty flavor and chewy consistency/texture of the brown rice!


Green Beans – 1 cup (chopped)

Carrots –  1/2 cup ( chopped)

Onion – 3/4 cup ( chopped)

Green Bell pepper – 1/2 cup (chopped)

Tofu – Cut into medium sized cubes (as in pic below, about 20 cubes)

Tomatoes – 2 medium sized (diced)

Green onion – 1/2 cup ( chopped)

Garlic – 1 tsp (grated)

Brown Rice – 2 cups

water – 3 and 1/2 cups

Red chilli Powder: 1/2 tsp

Garam Masala – 1/4 tsp

Turmeric – 1/4 tsp

Salt as required

Oil – 1 tbsp


Method Of Preparation:

In a pan, take some oil and heat. After the oil gets heated, add 1/2 tsp garlic and turmeric and saute the tofu for about 10 mins on each side. Add redchilli powder and garam masala. Good to make it about 1 hour before starting to make the fried rice.

In a utensil, boil 3 and 1/2 cups water. After it starts boiling, add brown rice and allow it to come to a boil and cook it low heat for about 15 mins to get nice and fluffy cooked brown rice. For best results,  let it cool for about 1 hour before making the fried rice.


Once the tofu and brown rice are ready, take a pan,  heat oil and then add onion, 1/2 tsp garlic , tomatoes and all the remaining veges and saute for about 3 to 4 mins. Then add the brown rice, tofu, red chilli powder,  garam masala powder and salt and heat the entire mixture for about 2 to 3 mins. Serve hot! Enjoy!
